Ingredients
- 2 Stonefire Pizza Crusts
- ¼ cup canned pumpkin
- ½ cup shredded Gouda cheese
- ½ cup grated Parmesan cheese
- 1 small butternut squash, diced
- 2 shallots, thinly sliced
- 3–4 slices bacon, chopped (optional)
- 10–12 fresh sage leaves
- Olive oil, butter, salt, and pepper
Directions
- Roast the squash: Preheat oven to 400°F. Toss squash with olive oil, salt, and pepper. Roast for 20–25 minutes, flipping halfway through, until tender and golden.
- Cook the bacon (optional): In a skillet over medium heat, cook bacon until crisp. Transfer to a paper towel–lined plate.
- Caramelize the shallots: In the same pan, melt a little butter or add a drizzle of olive oil. Add shallots and cook over low heat for 15–20 minutes, stirring often, until deeply golden and jammy.
- Toss sage leaves lightly in olive oil.
- Assemble the pizzas: Place Stonefire Pizza Crusts on a baking sheet or pizza stone. Spread each with a thin layer of canned pumpkin. Top with caramelized shallots, roasted squash, Gouda, Parmesan, and bacon (if using).
- Bake: Transfer to 400°F oven and bake for 8–10 minutes, until the cheese is melted and the crust is golden brown.
- Finish: Top with a sprinkle of red pepper flakes, and toasted pepitas if desired. Slice and serve warm.
