“Fall Harvest Pizza” Squash Pizza with Caramelized Shallots and Gouda

This “Fall Harvest Pizza” is a delicious way to celebrate the season. Made with Stonefire® Pizza Crusts and topped with roasted butternut squash, caramelized shallots, and creamy Gouda, every bite is savory, sweet, and perfectly autumnal. Finished with fresh sage and a drizzle of olive oil, it’s a simple yet elegant pizza that brings cozy comfort to any table.

Ingredients

  • 2 Stonefire Pizza Crusts
  • ¼ cup canned pumpkin
  • ½ cup shredded Gouda cheese
  • ½ cup grated Parmesan cheese
  • 1 small butternut squash, diced
  • 2 shallots, thinly sliced
  • 3–4 slices bacon, chopped (optional)
  • 10–12 fresh sage leaves
  • Olive oil, butter, salt, and pepper

Directions

  1. Roast the squash: Preheat oven to 400°F. Toss squash with olive oil, salt, and pepper. Roast for 20–25 minutes, flipping halfway through, until tender and golden.
  2. Cook the bacon (optional): In a skillet over medium heat, cook bacon until crisp. Transfer to a paper towel–lined plate.
  3. Caramelize the shallots: In the same pan, melt a little butter or add a drizzle of olive oil. Add shallots and cook over low heat for 15–20 minutes, stirring often, until deeply golden and jammy.
  4. Toss sage leaves lightly in olive oil. 
  5. Assemble the pizzas: Place Stonefire Pizza Crusts on a baking sheet or pizza stone. Spread each with a thin layer of canned pumpkin. Top with caramelized shallots, roasted squash, Gouda, Parmesan, and bacon (if using).
  6. Bake: Transfer to 400°F oven and bake for 8–10 minutes, until the cheese is melted and the crust is golden brown.
  7. Finish: Top with a sprinkle of red pepper flakes, and toasted pepitas if desired. Slice and serve warm.
