8 oz goat cheese, softened2 oz cream cheese, softened1 tsp Everything But the Bagel SeasoningZest of 1 small lemonPistachio & Apricot coating:½ cup shelled pistachios, finely chopped⅓ cup dried apricots, finely chopped1 tsp fresh thyme leavesPecan & Cranberry coating:½ cup pecans, finely chopped⅓ cup dried cranberries, finely chopped1 tsp fresh rosemary, finely choppedStonefire® Naan Crisps, Everything and Sea Salt varieties, for servingOptional: honey, for drizzling.
Directions.
Make the cheese base: In a medium bowl, beat together goat cheese, cream cheese, Everything But the Bagel seasoning, and lemon zest until smooth and creamy.Form the balls: Using a small cookie scoop or teaspoon, roll the cheese mixture into 1-inch bite-size balls. Place on a parchment-lined tray and chill for 20 minutes to firm up.Prepare the coatings: • In one shallow bowl, combine pistachios, apricots, and thyme. • In another bowl, combine pecans, cranberries, and rosemary.Coat the cheese balls: Roll half of the chilled cheese balls in the pistachio-apricot mixture and the other half in the pecan-cranberry mixture, pressing gently to adhere.Serve: Arrange the mini cheese balls on a platter with Stonefire Naan Crisps. Drizzle lightly with honey just before serving if desired.
