These Roasted Strawberry Bites are a little fancy, a lot delicious, and surprisingly easy to pull off. Stonefire® Cinnamon Sugar Naan Dippers are the perfect base for whipped ricotta, jammy balsamic-roasted strawberries, and a finishing touch of mint and glaze. Whether you’re entertaining or treating yourself, this bite-sized recipe is the ultimate way to impress—no stress required.
Ingredients
FOR THE WHIPPED RICOTTA
- ¾ cup whole-milk ricotta
- 2 tbsp crumbled feta (adds a nice tang but optional)
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 2 tsp honey
- Salt and black pepper, to taste
FOR THE STRAWBERRIES
- 1 pint fresh strawberries, hulled + halved
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tbsp lemon juice
pinch of kosher salt
FOR THE BASE
- 12 Stonefire Naan Dippers
- 1 tbsp olive oil (for brushing)
- 1 tsp sugar
- ½ tsp cinnamon
FOR GARNISH
- balsamic glaze (store-bought or homemade)
- fresh mint leaves, torn
- chopped roasted pistachios (optional but highly recommended)
Directions
- Make the whipped ricotta. In a food processor, blend ricotta, feta (if using), olive oil, lemon juice, and honey until light and creamy.
Season with black pepper to taste. Set aside or chill until ready to use. - Roast the strawberries.Preheat oven to 375°F. Toss strawberries with balsamic, honey, lemon juice, and a pinch of salt.Spread on a parchment-lined baking sheet and roast for 15–20 minutes, until soft, jammy. Let cool slightly.
- Warm the naan dippers. Increase oven temp to 400°F. Brush naan dippers with olive oil and sprinkle with cinnamon and sugar. Bake for 2–3 minutes, just until warmed and lightly crisp.
- Assemble the bites.Spread each naan dipper with whipped ricotta. Top with a few roasted strawberries. Finish with fresh mint and a drizzle of balsamic glaze. Enjoy!
