- 2 pounds (approx.) of peeled cooked shrimp 🍤 – deveined & tail removed
2 Tbsp of olive oil
3 cloves of chopped garlic
3 peppers – cut into slices (red, yellow, & orange)
1 Tbsp of paprika
1 Tbsp of oregano
1/2 tsp of cumin
1/2 tsp of crushed red pepper flakes – optional
1/2 tsp of salt
4 – 6 Stonefire® Naan Original
Guacamole for garnish
Feta for garnish
Salsa for garnish
Parsley or cilantro for garnish
Lime juice to squeeze
- Line a sheet pan with parchment paper. Add shrimp, pepper slices, olive oil, herbs, spices & salt. Toss together until well combined. Cook for approximately 15-20 minutes at 425 ℉. Toss shrimp and peppers together a few times while cooking.
While shrimp is cooking, grill naan on a grill pan that has been brushed with olive oil. Be sure to grill both sides.
Assemble fajitas by adding shrimp and peppers to naan, followed by garnishes of choice. Enjoy!
Recipe makes 4-6 fajitas, depending on how much shrimp and peppers you add to naan. You could add any garnishes of choice.
